Grilled Cherry Goat Cheese Arugula Pizza by Rainier Fruit

Mt Rainier is a famous (and beautiful) mountain in Washington State. Rainier Cherries take their name from the place - those lighter, yellow, ombre-colored cherries that have a little more sugar than their traditional Bing counterparts.

Rainier Fruit brings together small fruit growers across Washington state, sharing many varieties of apples, pears, cherries and blueberries with their customers and recipes with those of us located outside the state. Like this gorgeous pizza.

  • 1 large piece of pre-made Naan or flatbread
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, smashed (or 1 teaspoon of minced garlic)
  • 1 cup Rainier Fruit Dark Cherries, pitted and halved
  • 2 ounces goat cheese, crumbled
  • 1 cup arugula
  • Balsamic glaze, enough to drizzle
  • Salt and pepper to taste
