Baby Kale Salad w/ Lentils & Apricots by Mario Hernandez & Frog Hollow Farm

Frog Hollow Farm is one of the best vendors at San Francisco's Ferry Building. Their organic, fresh fruit and all of the yummies they produce from it are amazing. They make dried fruit, preserves, tarts, pies, scones, muffins and ... scuffins, which is a cross between a scone and a muffin with "a surprise dollop of nectarine conserve baked in the center," (see 2nd link).

This beautiful recipe from Mario Hernandez features Frog Hollow's Apache apricots. Ingredients listed here, but see link 3 below. Links 1 and 2 are to more bef-afters from Frog Hollow (guacamole and those scruffins).

Ingredients:

  • A single 9 oz.  a container of baby kale or 2 bunches of regular sized kale
  • 3 Apache apricots, cut into 8 pieces each, 24 slices in total
  • A ½ cup of cooked black lentils dressed and seasoned (follow instruction on the packaging)
  • 4-6 ounce of feta cheese, crumbled
  • 1 small spring onion, finely diced or thinly sliced, salted then, macerated in vinegar or lemon juice
  • Quality olive oil to taste
  • Quality vinegar or Meyer lemon juice to taste
  • Kosher salt and freshly ground black pepper
